Our fundamental mission is to maintain the natural balance of our plots while ensuring that the grapes are in perfect health.
The challenge is twofold: to produce sincere, unadulterated wines that are an authentic reflection of their origin, and to ensure the sustainability of this precious plant heritage for future generations.
Our work in the vineyard follows conventional practices, but is always guided by a deeply pragmatic and respectful approach. Far from any systematization or excessive measures, we favor the heritage of “good farming sense,” forged by careful observation, experience, and absolute respect for the natural cycles of the vine.
Drawing on our Burgundian roots, we take a restrained, hands-off approach that honors the terroir of L’Étoile. The goal is not to copy a style, but to let the terroir express itself fully through respectful aging practices that highlight the wine without masking it. We aspire to produce wines that sincerely reflect a year, a vineyard, and a soil: wines that are pure, lively, and authentic.
Our winemaking philosophy is rooted in the tradition of Jura wines with pronounced oxidative characteristics, while striving for precision, integrity, and elegance.
