Vines aged between 60 to 70 years old, trained using the single Guyot method, from massal selections. Short pruning to concentrate the grapes. Grass cover every other row to promote soil biodiversity.
Alcoholic fermentation in steel tanks with indigenous yeasts. Malolactic fermentation in barrels. Aged 100% in old barrels (topped up). Unfiltered.
