Savagnin rosé is a rare genetic mutation of Savagnin blanc, belonging to the Traminer family. Now almost extinct, it is still carefully cultivated at Château de l’Étoile, one of the last estates to preserve its cultivation.
Vines aged between 60 and 70 years old, trained using the single Guyot method with mass selection. Short pruning and alternating grass cover to preserve soil life.
Spontaneous fermentation with indigenous yeasts in stainless steel tanks. Malolactic fermentation in barrels. Aged exclusively in stainless steel tanks, without wood. No filtration.
